Street food are usually local traditional cuisines that can be found in other public place, such as at Bangkok’s market or fair. Vendor owners can have their own business easily compared to renting a store at a mall. It is also convenient and more affordable for workers that are nearby. However, street food vendors often face hygiene and disorganisation as there might be a lack of cleanliness due to dust and dirt from the road which often leads to food poisoning in consumers. If Bangkok were to apply Singapore’s method of bringing local cuisines together in hawker centers and food courts, street food vendors would be able to return the pavement spaces that belonged to the pedestrians while maintaining a good hygiene and returning the nostalgic flavor. As an interior designer designing a hawker center like this, it is important to be able to bring culture into the space and taste.
